Ask Heather:

Heather L. Fallon serves as the Director for the Center for Administrative Management at the Performance Institute.  Have a question for next month?  Please e-mail Heather at:  [email protected].

Q:   I’ve been at my current position, working as an office manager at a midsize paper supply company, for the last eight months. Over this time, I have done an excellent job at performing my specific functions. However, I am starting to feel bored and unchallenged. Is it appropriate for me to ask for more work or more duties? I feel like I have so much more to contribute, and that my strengths are not being well-utilized. Who should I talk to about this? It seems inappropriate to just take on more duties without asking. A former colleague of mine has complete conversations in his head with people that he is angry with, and rarely directly with the other person.  This anger in his head continues to build because of his frustration, yet he never lets the other person know that he is frustrated and subsequently angry.  It got so bad that he almost lost his marriage because he didn’t let his wife into these conversations he was having with her; but by himself.  It was almost too late by the time he did bring her into the real conversation.  His need to avoid confrontation is so strong that he has a safe confrontation in his mind and feels that he has dealt with the issue.  As you can imagine, this doesn’t work (especially for the other person involved).

You’ve heard the jokes about the procrastinators’ recovery group that keeps putting off their meeting date? And we all laugh because we all know it is true. We’ve been there.
Procrastination is a behavior that seems to hit everyone at some point.

  • We procrastinate about things we don’t like to do.
  • We procrastinate about things that will take energy or time.
  • We procrastinate about things we think we can’t do well.

Recipe of the Month

Abby’s Chicken Enchiladas and Black Bean Salad

Enchiladas:
2-3 medium chicken breasts
Brick of Monterey Jack Cheese with jalapeño peppers
8 large tortillas
Can of Salsa

Boil a couple of chicken breasts in water until thoroughly cooked and shred chicken.  In large tortillas (4 per casserole dish), place several slices of Monterey Jack cheese with jalapeño peppers (about 3 slices) in each tortilla.  Place as much shredded chicken as desired in each tortilla atop the cheese slices.  Then pour a couple spoonfuls of salsa on top.  Fold tortillas and like a burrito and place four per casserole dish.

Sauce:
1/2 cup flour
1/3 cup butter
2 cups chicken broth
2 cups milk
2 cups grated Colby jack cheese
1 cup sour cream
1/2 teaspoon worcheshire sauce
1 teaspoon dry/ground mustard
a pinch of red pepper flakes or cayenne and pepper (as desired)

Directions:

Mix the sauce ingredients in a big pot on stove--heat lightly until mixed (stir constantly using whisk).  Sauce is done when grated cheese melts and mixture slightly thickens.  Pour atop tortillas in two casserole dishes.  Cook at 350 degrees for 30 minutes.

Black Bean Salad
2 15oz. cans black beans (drained and rinsed)
1 15oz. can corn (drained)
tomatoes, chopped
cilantro, coarsely chopped
scallions, chopped
red onions, finely chopped
juice of one lime and lime zest
splash of corona, optional
olive oil drizzle
salt, pepper, and garlic powder to taste.

Mix until even color and looks yummy!
